The Ember Hearth
EMBER-ROASTED VEGETABLES
Golden at the edges. Tender at the center. Full of flavor.
There is something wonderfully simple about a tray of well-roasted vegetables. A little oil, good seasoning, enough heat, and time to let the edges caramelize.
This is the kind of everyday cooking Ember was made for—simple ingredients, thoughtfully seasoned, and good enough to keep coming back to.

- 2 cups green beans, trimmed
- 2–3 tablespoons olive oil or neutral cooking oil

Let’s Cook
1. Heat the oven.
Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly oil the pan.
2. Prepare the vegetables.
Cut the sweet potatoes, potatoes, and carrots into evenly sized pieces. Keep the broccoli florets fairly large and trim the green beans.

3. Season generously.
Place the potatoes, sweet potatoes, and carrots in a large bowl. Drizzle with some of the oil, sprinkle with Ember Hearth & Herb Blend, and season lightly with salt. Toss until evenly coated.
Spread them across the baking sheet in a single layer, leaving a little room between the pieces.

4. Start roasting.
Roast the potatoes, sweet potatoes, and carrots for about 15 minutes before adding the quicker-cooking vegetables.
5. Add the greens.
Toss the broccoli and green beans with the remaining oil and a little more Ember Hearth & Herb Blend.
Add them to the baking sheet and return everything to the oven.

6. Let the edges become golden.
Continue roasting for another 15–25 minutes, turning the vegetables once if needed, until the potatoes are tender, the broccoli is lightly crisp at the edges, and the vegetables have developed good color.

FROM THE EMBER KITCHEN
Give them room.
One of the simplest secrets to beautifully roasted vegetables is space. When too much is crowded onto one pan, the vegetables trap steam and soften instead of developing those deeply flavored, golden edges.
Use a second baking sheet if you need to. A little extra room can make all the difference.
And remember that different vegetables cook at different speeds. Start the sturdier ones first and let the more delicate vegetables join them later.

Make It a Table
Simple enough for Tuesday. Good enough to share.
Serve alongside rice, grilled chicken or fish, fold the vegetables into a warm grain bowl, add them to a salad, or simply bring the whole platter to the table.
Sometimes the simplest things are the ones that disappear first.
